YUMM! The Perfect Labor Day Feast! #fitfam

With Labor Day comes fun with friends and family.  Here is a Labor Day feast that has lots of flavor! Adult Picnic Punch, Flank Steak with Almond Pesto, Tequila Lime Coleslaw and No Back Peach Pie. Oh Yeah THIS meal is BEYOND!

Picnic PunchPicnic Punch

Ingredients

  • 1 part Pinnacle® Raspberry Vodka
  • 3 parts Ginger Ale
  • Fruit Popsicles

Preparation

Mix ingredients and serve in a pitcher. Use fruit popsicles as ice (www.thecocktailproject.com)

Steak and Pesto

Flank Steak with Cilantro-Almond Pesto

Ingredients

¾ cup fresh cilantro

2 tablespoons slivered almonds, toasted

1 tablespoon chopped seeded jalapeño pepper

1/8 teaspoon salt

1/8 teaspoon black pepper

1 garlic clove, chopped

3 tablespoons plain fat-free yogurt

1 ½ teaspoons fresh lime juice

1 (1-pound) flank steak, trimmed

Cilantro sprigs (optional)

Preparation

Prepare grill.

Combine first 6 ingredients in a blender; process until finely chopped (about 15 seconds). Add yogurt and juice; process until smooth.

Grill steak 6 minutes on each side or until desired degree of doneness. Cut steak diagonally across grain into thin slices. Serve steak with pesto. Garnish with cilantro sprigs, if desired.

Tequila Lime ColeslawTequila Slaw with Lime

Ingredients

¼ cup canola mayonnaise (such as Hellmann’s)

3 tablespoons fresh lime juice

1 tablespoon silver tequila

2 teaspoons sugar

¼ teaspoon kosher salt

1/3 cup thinly sliced green onions

¼ cup chopped fresh cilantro

1 (14-ounce) package coleslaw

Preparation

1. Combine first 5 ingredients in a large bowl. Add remaining ingredients; toss.

No Bake Peach Pie

No Bake Peach Pie

Ingredients

¾ cup graham cracker crumbs (about 5 cookie sheets)

¼ teaspoon salt, divided

1 tablespoon unsalted butter

3 ½ ounces white chocolate, finely chopped

Cooking spray

5 ounces 1/3-less-fat cream cheese, softened

1/3 cup powdered sugar

½ teaspoon vanilla extract

2 cups frozen fat-free whipped topping, thawed

2 tablespoons seedless peach spread

1 tablespoon peach schnapps

½ teaspoon fresh lemon juice

3 medium peeled peaches, pitted and cut into ½-inch wedges

Preparation

1. Combine crumbs and 1/8 teaspoon salt in a food processor; process until combined. Place butter and chocolate in a microwave-safe bowl. Microwave at HIGH 30 seconds, stirring until chocolate is smooth. Add to processor; pulse until combined. Press mixture into bottom and up sides of a 9-inch pie plate coated with cooking spray. Freeze 20 minutes or until set.

2. Place cream cheese, sugar, and vanilla in a medium bowl; beat with a mixer at medium speed until smooth. Gently fold in whipped topping. Carefully spread filling over bottom of crust. Place fruit spread in a large microwave-safe bowl; microwave at HIGH 30 seconds or until bubbly. Stir in remaining 1/8 teaspoon salt, schnapps, and juice. Add peach wedges; toss to combine. Arrange the peach wedges over pie. Chill for 3 hours before serving.
